It can be used in fruit wine, beverage, meat, food, pastry making, vegetable pickling, canned processing, grain processing, and fruit storage. It can adjust pH value, inhibit bacteria, extend shelf life, flavor, maintain food color, and improve product quality.
2. In terms of flavoring, the unique sour taste of lactic acid can increase the taste of food. Adding a certain amount of lactic acid to salad, soy sauce, vinegar and other condiments can maintain the stability and safety of microorganisms in the products, while making the taste more mild.
